Lunch was the rest of last night's sushi. Because using up leftovers is not only productive but sexy.
For dinner tonight I made Black bean sliders. Step one: Saute potatoes and onions in a little bit of oil. add 2 cloves of garlic (I only added one, despite my love of garlic I find two a bit strong) I also added zucchini, mushrooms and some yellow peppers, which the recipe didn't call for. Diversion aside, continue sauteing until the potatoes are soft but not browned. Now, the original recipe said to let cool and then add other ingredients but I just put it the the blender to make it a littler smoother. To this mixture add bread crumbs and black beans. (original recipe also calls for poblano peppers ( I had to google what these were and of course I didn't have any). Mixy mix and then form into patties. Drop in a bowl of flour (I used quinoa flour) covering both sides then fry in a little oil until they are dark. Everything is already cooked so fry for whatever length of time you like. Add condiments to your heart's content... and Voila dinner!

Side note. The vegan zombie not only has awesome recipes but a whole series of youtube videos showing you exactly what to do. ( and he ain't too hard on the eyes either)
