For breakfast this morning I had an english muffin with peanut butter and a banana.
Lunch I had red pepper and black bean soup, with cut up veggies and a tomato sandwich
Dinner, I made "chicken" burgers with coleslaw and tomatoes on some great buns. Then as my something new I made salt and vinegar potatoes. First boil the potatoes in vinegar for five minutes, then remove from heat and let sit for 30 minutes. Just a warming when boiling vinegar there are very dangerous vinegar fumes that when inhaled cause some choking and eye burning. Place potatoes on greased cookie sheet and salt. Bake at 425 for 30 minutes, flip and bake another 10. I also made some green beans, broccoli and cauliflower. Voila dinner!
Conclusion. My sandwich was delicious, chicken is the obviously the easiest of the meats to fake cause it was super yummy. The potatoes on the other hand were all kinds of yuck. The vinegar was over powering. and inside the beans were an explosion of vinegar. Sadly I think the better idea would have been to make regular potatoes and then if you wish add a little vinegar. Even Len who douses his french fries in vinegar thought the veggies were too vinegary.
