Lunch was a tomato bagel, veggies and a few Terra chips.
Dinner was mushroom cap pizza. To make this you need stuffer mushrooms, or you could use portabellini's or even portabellas. I used stuffer mushrooms. clean and remove the stem, then scoop in some pizza sauce, cashew cheese, and toppings of choice. I used orange peppers. To make cashew cheese, you soak cashew cheese over night, then blend with a little almond milk, garlic, nutritional yeast and garlic. Bake the filled caps at 350 for 10 mins and then broil for another few minutes. I made some cooked carrots and asparagus. and Voila dinner!

Conclusion: good. The mushroom pizza caps did not really taste like pizza, and the cashew cheese really didn't taste like cheese, but the nutty flavour worked well with the mushrooms. The carrots and asparagus were very tasty. Len was not impressed with the caps. He apparently was hoping for something a little more pizza-like and wanted me to make them with the fake daiya cheese, which I find gross.
For a snack I ate the guacamole that I made last night and had a lime soda. The guacamole was made with avocado, tomato, onion, and garlic. The lime soda I just bought.
Conclusion: gross. Now I don't know if this was because I left it overnight, notice its brownish hue or perhaps I just made it wrong. Len disliked it a lot as well. It had no real flavour, perhaps I needed more garlic, I am unsure. The lime soda was also gross, I thought it was going to taste like lime-ade, but it almost had some sort of creamy taste. Needless to say snack time was a large disappointment.
