Day 1

Today is the first day of the 30 day Vegan Challenge.  However I am completely unprepared.  Somehow despite knowing that I was going to do this for the last month, I didn't manage to make a menu, start this blog, or go grocery shopping.  However despite all of that I vowed not to postponed or back out.  The hope being that the blog will hold me accountable, and force me to persevere. 

I've been what is technically called a pescatarian for many years.  A pescatarian being no chicken, beef, or pork, but I do eat fish and dairy.  So last night I finished the cheese in the fridge, and headed in today with hope I wouldn't miss anything too much.

So breakfast, easy enough have a fruit shake, throw in some carrots to get extra veggies, and we're off.

Lunch, also easy enough, cut up veggies, potato soup, and a wrap.  No problem, kind of a regular lunch for me.

Dinner, now this is a different story.  So I have to make it with things I have here, and since I have a huge cabbage, I decide cabbage rolls would be a good idea.  And they are... in theory.   As I begin to prepare them, I read the recipe.  This should have probably been done sooner, as the first step is freeze your cabbage.  Ok well that should have been done yesterday but we will be extra careful and use the fresh stuff.

Great, step two, make rice.  Moths have decided to move into my rice supply, so off to the garbage that goes, but I have some moth-free quinoa so I make that.

Ok step three sautee onions garlic and TVP.  Well I do have garlic no onions, I have no idea what TVP is.  So I fry the garlic, mushrooms, zucchini, and ground round. 

Ok step four, add can of diced tomatos, and tomato paste.  Well I don't have any of that, so I cut up fresh tomatos and put them in.

Now I boil my not frozen cabbage, and fill it will my filling.  Place them in a glass dish, cover in Ragu cause oh yeah I didn't have the stuff to make the sauce.  Cook for an hour, and Voila!  cabbage rolls

Cut up some veggies, with a little humus, and seven grain crackers and we have dinner!

Conclusion.  Filling is delicious.  Cabbage wrapping is a little chewy, so next time I will try to remember to freeze my cabbage.  Len (my somewhat willing guinea pig) 's conclusion is chewy but tasty, and the comment that quinoa looks like tiny worms. 

For dessert I made some maple cinnamon pumpkin seeds, since it was just halloween and I had a huge bowl of seeds.  They maple made them all stick together and they are quite yummy.

So the day went well despite my lack of preparations.  Hopefully tomorrow I will manage a little more organization.
