Forgot to tell you I made cashew "cheesecake". When I made the cashew cheese for the mushroom caps, I had way too much whipped cashew left over. So I blended them with some sugar, peanut butter, hazelnut butter and cocoa. poured it over a graham mixture and froze.
Conclusion. Yummy. My blender is not the greatest and so I was unable to produce a really smooth texture. but the nutty flavours go well and the grittiness is not off-putting. Note if you make this remember to take it out of the freezer way ahead of time, because it tends to freeze quite solid which makes it difficult to cut.
