Alright Day 2 to begins and I am still shall we call it less than prepared.
breakfast is an easy fix, shake time! today was tropical cause its a balmy 14 out today, so we went with pineapple banana mango in a carrot juice. Tastier and less lumpy than yesterday, but approaching the end the pineapple got to be a little much and made my tongue a little tingly.
Lunch was the rest of yesterday's soup and cut up veggies.
And then comes dinner. When "planning" and yes I use the word planning in only the vaguest sense, this blog I thought it would be a good idea to have something different every night, to show the vast and varied dishes that are available to vegans. However recipes rarely make just enough for one meal, and leftovers going to waste seems.. well seems wasteful. So with slight changes, I used up the cabbage rolls from last night.
I baked some buttercup squash. cut in half and place upside down on a cookie sheet and cook at 350 for well for however long until they are soft, I think it was like half an hour.
Then I discarded the chewy cabbage and place the yummy inside "roll" into the squash.
Cook up some corn broccoli and cauliflower, and made ciabatta bun garlic bread. and Voila dinner!
Conclusion. Liked way more than the cabbage roll, but to be fair I love me some squash. Len agreed squash filled won out over cabbage filled. not to hurt the cabbage's feelings though cause I did not prepare them correctly so perhaps their full potential was not reached.
Dessert. because I still want sweet things. I made Choco Balls. Now there is no real recipe for chocolate balls, it basically goes like this. peanut butter, hazelnut butter, avocado, maple syrup, almond milk, cocoa, quinoa flour, mix, bake for ten minutes. Now you may ask how much of each ingredient, I couldn't tell you , I am not that kind of baker, basically I mixed varying portions until I reached a cookie dough like consistency.
Despite the fact that these look like meatballs, they were quite yummy, and I can convince myself they are healthy, since avocado is full of those good fatty acids, quinoa is a super food, peanut butter is a good source of protein, maple syrup doesn't spike blood sugar, like refined sugars do. All of that I am sure outweigh their high calorie count.
