As day 3 begins I am far more prepared, because last night after dinner I went grocery shopping. not only did I go grocery shopping but I went prepared with a list and everything. Which for me is such a novel idea, normally I wander around and throw things in the cart that I think look tasty, then arrive home without anything that could really go together into an actually meal.
So breakfast begins in the usually shaky way. This morning took a decidedly unpleasant look to it, Green goddess juice and blueberries makes for a very brown looking drink. and the blueberries didn't blend well so my drinkable breakfast became a little bit of a chew-fest.
Lunch, market vegetable soup, and a veggie wrap. and perhaps one of two choco balls.
Dinner. Here we get down to business. Tonight's adventure is Tu-Nut sandwiches. Tu-nut is supposedly a tuna replacement, and unlike the fake "meats" out there, it is not made of soy or weird chemicals, it is actually home made. First step is soak 2 cups of almond in water for 12 hours. Luckily the new prepared me started soaking those nuts last night, so they are good and ready. Then you blend those soggy nuts with a jar of marinated mushrooms, and seasoning, I used garlic, (pepper and salt for Len's, I can't stand pepper). I also chopped up celery and red peppers. then blend away. Blending took awhile, since I have a tiny blender. (hopefully Christmas will bring me a shiny new ninja blender)
So the tuna mixture is mixed with some vegenaise and stuffed in a pita. If anyone can tell me how to open a pita without it falling to pieces I would give them a shiny medal. stuffed in some tomato, spinach and pickles. side dish cut up veggies, crackers and hummus and Voila dinner!
Conclusion: Really tasty. I was surprised I had my suspicions that it would be awful, but I was pleasantly surprised with the results. However they tasted nothing at all like tuna, which is not necessarily a bad thing. Len liked them too, another surprise. So go trying new things!
Dessert. not including some choco balls I sneaked. Was baked apples. chopped an apple, doused it with maple syrup and sprinkled on some cinnamon and pumpkin granola. baked for awhile, until apples are soft. then covered them with banana "ice cream". Banana ice cream is awesome, basically chop up a banana and freeze it then blend until creamy, it is ridiculously tasty and non-dairy. fun note try mixing in other flavours, like peanut butter, cocoa, raspberries. and we have dessert!
Being lazy I simply chopped up the apples, but it would have been far better if I had peeled them.
